Healthy & keto friendly: creamy cauliflower soup

9 Ingredients

  1. 1 tbsp extra virgin olive oil
  2. 1 small onion chopped
  3. 3-4 garlic cloves chopped
  4. 1 head cauliflower, cut into florets
  5. 2 cups water
  6. 1 cup coconut milk (or your choice)
  7. Salt & pepper to taste
  8. 1 teaspoon ginger
  9. 1 teaspoon turmeric

5 Steps

  1. Sauté the onion for few minutes, or until it begins to brown
  2. Add the garlic
  3. Cook over medium-high heat until golden brown.
  4. Add the cauliflower, water and milk and bring it to a boil.
  5. Cook over medium-high heat for about 15 to 20 minutes or until the cauliflower is soft (the smaller the cauliflower, the quicker it will cook)
  6. Add the salt, pepper and favorite spices and herbs
  7. Don’t forget to grate fresh ginger & turmeric
  8. Blend using an immersion or a regular blender.
  9. Divide the Cauliflower Soup among bowls and sprinkle with toasted pine seeds or your favorite toppings
