Healthy & keto friendly: creamy cauliflower soup
9 Ingredients
- 1 tbsp extra virgin olive oil
- 1 small onion chopped
- 3-4 garlic cloves chopped
- 1 head cauliflower, cut into florets
- 2 cups water
- 1 cup coconut milk (or your choice)
- Salt & pepper to taste
- 1 teaspoon ginger
- 1 teaspoon turmeric
5 Steps
- Sauté the onion for few minutes, or until it begins to brown
- Add the garlic
- Cook over medium-high heat until golden brown.
- Add the cauliflower, water and milk and bring it to a boil.
- Cook over medium-high heat for about 15 to 20 minutes or until the cauliflower is soft (the smaller the cauliflower, the quicker it will cook)
- Add the salt, pepper and favorite spices and herbs
- Don’t forget to grate fresh ginger & turmeric
- Blend using an immersion or a regular blender.
- Divide the Cauliflower Soup among bowls and sprinkle with toasted pine seeds or your favorite toppings
